Easy Low Fat Zucchini Stuff Recipe |

Ingredients; 3 Medium Zucchini - sliced into approximately 5mm wide rounds 1 cup Dry Breadcrumbs - homemade is best 1 Small Onion - finely chopped or sliced pinches of Salt & Pepper - to season 1/2 cup Reduced Fat Grated Cheese 1 cup Tomato Juice, V8 juice, or similar
Method; Pre-heat oven to 180oC (unless using a microwave) In an ovenproof dish (eg: 30cm by 18cm, & about 3cm deep), layer zucchini, onion, breadcrumbs, cheese, salt & pepper until dish is almost full. Pour juice over, and place in pre-heated oven until hot & bubbling, and zucchini is soft when tested with a skewer (30mins or so, less in a microwave). Yummo as a side dish to your favourite grilled/BBQ’d meat or substitute. Serves 6
