Easy Low Fat, High Protein Pancake with Mixed Berries Recipe |

Ingredients (for one): - ½ cup plain rolled oats
- 3 egg whites (or 2 tblspn Egg Albumen Powder & 1/3 cup water)
- 2 heaped tsp low fat cottage cheese
- 1 scoop protein powder
- Cinnamon to taste (optional)
Topping: Method: Place 3 egg whites in a bowl. Mix in oats and protein powder (mix with fork). Add cottage cheese and cinnamon. Mix with fork. Lightly spray a small frypan with Olive Oil spray. When pan is hot, pour pancake mixture into pan (should cover the whole pan to make a thick pancake). Cook until brown on both sides, and cooked through. Put 1 cup frozen berries into microwave and cook for 3-4 minutes until hot. Pour over pancake and add sugar free maple syrup --------YUM!!!!!!
