Easy Low-Fat Banana Nut Bread Recipe |
|
|
|
Ingredients; - 3 or 4 medium bananas, peeled & mashed
- 1 tsp. Sweetener or 2 sachets of Equal
- 2 tblspn Egg Albumen Powder & 1/3 cup water (or 3 egg whites), beaten
- 1¾ cup Wholemeal Self Raising Flour
- 1 pinch Salt
- 30g (1 level scoop) Protein Powder …..I love BSN’s Lean Dessert in Banana Nut flavour in this recipe ;-)
- ¼ cup chopped Walnuts
Method; With bananas in a large bowl, sprinkle with sweetener and mix through until dissolved. Blend beaten egg whites into bananas. Sift dry ingredients together, add nuts, and mix into banana mixture which should resemble a wet dough. Pour into a loaf pan which has been greased with cooking spray. Bake at 180˚C for 25 minutes, lower heat to 150˚C and bake for another 35 minutes or until done: top will be golden, and a skewer inserted into the centre of the loaf comes out clean. Turn out onto a wire rack to cool. Cutting loaf with a sharp serrated knife works best. Yummmm! Serves 12.

Handy hint; Individual ripe bananas may be frozen whole in their skins in a freezer bag for up to 3 months. Once thawed they’re ideal for cooking …….. and sooo convenient ;-) Vicki Hadfield, Fitness For Females
