Easy Low-Fat Banana Nut Bread Recipe PDF Print E-mail

Ingredients;

  • 3 or 4 medium bananas, peeled & mashed
  • 1 tsp. Sweetener or 2 sachets of Equal  
  • 2 tblspn Egg Albumen Powder & 1/3 cup water (or 3 egg whites), beaten
  • 1¾ cup Wholemeal Self Raising Flour
  • 1 pinch Salt
  • 30g (1 level scoop) Protein Powder …..I love BSN’s Lean Dessert in Banana Nut flavour in this recipe ;-)
  • ¼ cup chopped Walnuts


Method;
With bananas in a large bowl, sprinkle with sweetener and mix through until dissolved.
Blend beaten egg whites into bananas.
Sift dry ingredients together, add nuts, and mix into banana mixture which should resemble a wet dough.
Pour into a loaf pan which has been greased with cooking spray.
Bake at 180˚C for 25 minutes, lower heat to 150˚C and bake for another 35 minutes or until done: top will be golden, and a skewer inserted into the centre of the loaf comes out clean. Turn out onto a wire rack to cool. Cutting loaf with a sharp serrated knife works best.  Yummmm! Serves 12.

Handy hint; Individual ripe bananas may be frozen whole in their skins in a freezer bag for up to 3 months. Once thawed they’re ideal for cooking …….. and sooo convenient ;-)
